Here’s a recipe that I believe our family has been using as long as I have lived. I’m not sure where it came from.
Mix in bowl (stand mixer with paddle):
- 1/2 cup melted butter (I use salted)
- 3/4 cup brown sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 2 eggs
- 4 or 5 over-ripe bananas
Then mix in (only needs a few seconds):
- 1.5 cups all-purpose flour
- chopped walnuts (optional)
Bake at normal baking temperatures until cooked through. In my oven that’s just over 20 minutes at 350F convection.
Serve with butter in the middle. Freeze leftovers within a day.
